Low-Carb Taco Recipe

In case you haven’t noticed, I am lovin’ the low-carb recipes lately. As a type 1 diabetic, I am especially sensitive to how foods make me feel. And for me, low-carb foods keep my blood sugars more stable and still leave me feeling satisfied. (Read: they help me feel amazing!) You might think that low-carb recipes are void of flavor or excitement. Think again! This low-carb taco recipe is proof of that.

If you have ever read Dr. Bernstein’s books about diabetes solutions and recipes, you’ll know that things like a taco shell, tomatoes, and onions are not good for diabetics. They raise the blood sugar rapidly, causing a spike. Yeah…I think I’ll pass on that. So instead of the traditional taco shell, this low-carb taco recipe uses a simple 2-egg omelette instead. And the taco is stuffed full of only foods that are diabetic-friendly.

The way I feel like describing this recipe reminds me an awful lot of the hilarious Ham Porter quote from the movie Sandlot: “First, you take the graham. You stick the chocolate on the graham. Then, you roast the mallow. When the mallow’s flaming, you stick it on the chocolate. Then, you cover it with the other end. Then, you stuff.”

Here, let me try…First, you take the eggs. You beat the eggs with the fork and put them in the pan. Then, you cook the eggs. When the egg is bubbly, you flip it in the pan. Then, you take it off and fill it with tasty things. Then, you stuff. #amiright? For a slightly more detailed approach, read below.

Ingredients:

  • Taco Shell AKA Omelette
    • 2 eggs
    • Oil
    • Salt & pepper
  • Taco Fillings
    • Hamburger
    • Shredded lettuce
    • Cheese
    • Sour Cream
    • Avocado

Directions:

  1. Season hamburger with salt and pepper. Cook on medium heat on stove top until no longer pink. Set aside.
  2. Preheat pan on medium-low heat. Add a small amount of oil to pan.

  3. Beat two eggs, season with salt & pepper, and pour into preheated pan. Sprinkle cheese across the top (optional). (And here we are again using the amazing Rachel Ray cookware. If you need non-stick cookware, look here.)
  4. Allow the eggs to cook until they have just set. Then flip the omelette over and cook on the other side for a few seconds. Transfer to a plate.
  5. Fill your egg taco shell generously with taco fillings.
