Today I’m making lazy deconstructed meatball subs. I don’t have to worry about putting the subs together, and my kids love dipping and having their food not all mixed together, so it’s a win, win over here!

Deconstructed Meatball Subs Recipe for a quick, easy, and delicious dinner. Flavorful Italian dinner idea for busy moms that kids will love. Lazy food idea.

Below are the ingredients and directions for making your own lazy deconstructed meatball subs. This recipe serves 4.

Ingredients

  • 1 pack of Carando® Abruzzese Meatballs
  • Marinara sauce (simply use 1 jar of your favorite marinara sauce if you don’t want to make your own)
    • 8 tablespoons butter (or 4 tablespoons olive oil)
    • 2 tablespoons minced garlic
    • 10 large tomatoes on-the-vine
    • 1 teaspoon of oregano
    • 1 teaspoon of basil
    • 6 baby bella mushrooms
    • 1/2 cup white cooking wine
    • Add salt for taste (about 1 teaspoon if desired)
  • 4 hoagie rolls
  • 2 cups mozzarella cheese

To gather these ingredients, I went to my local Smith’s Food & Drug grocery store, but it can be found at other retailers. Because Carando meatballs are fresh, not frozen, I found them in the fresh meat cases.

Directions

Make the Meatballs

Simply place the Carando® Abruzzese Meatballs on a baking sheet lined with tin foil. (Tip: Fold the edges of the tin foil up to help make cleanup easier.) Bake according to package directions.

FYI, I’m loving the head start on this dinner! These delicious, flavorful meatballs are the foundation of this whole meal. And how easy was that?!

Make the Sauce

While your meatballs are in the oven cooking, start on your marinara sauce. If you are extra lazy or in a pinch, grab a jar of marinara sauce and heat it on the stove over medium heat and let simmer while meatballs finish cooking.

If you feel up to making your own sauce and want to use fresh ingredients, you can follow these steps:

Start by dicing the tomatoes and finely chopping the mushrooms.

Then, melt the butter in a pot over medium-high heat and stir in the minced garlic.

After a minute or so, add the diced tomatoes (along with any tomato juices made during the chopping process), oregano, and basil to the pan, and let it cook for about 8 minutes until tomatoes have softened.

Then, stir in chopped mushrooms, and let it cook for about 3 minutes until mushrooms are soft.

Pour in white cooking wine and let it bubble for a couple of minutes allowing the alcohol to cook off.

Salt to taste. Reduce heat and let simmer while meatballs finish cooking.

Make the Cheesy Bread

Slice open hoagie rolls and cover with mozzarella cheese.

When the meatballs are done, pop the hoagie rolls in the oven on a baking sheet and broil on high for about 2 minutes until cheese is melted and toasted. (Tip: Keep an eye on them! They can go from perfect to burned pretty quickly.)

Serve

Serve immediately by placing marinara sauce and meatballs in a bowl with cheesy bread on the side to dip. Enjoy!
