I got to be a guest writer on SoFabFood.com and share a childhood recipe: Hawaiian Haystacks! I thought it was a recipe everyone knew about until I realized most people haven’t even heard of it. Have you? My husband had no idea what I was talking about when I asked him about it the first time.
Hawaiian Haystacks is a bed of white rice topped with chicken gravy and healthy toppings. Think: fresh chopped tomatoes, peas, pineapple chunks, chow mein noodles, shredded cheese, and coconut flakes. This recipe can easily feed four people for $10. (Especially if you buy things in bulk like rice, peas, cheese, etc.). Better yet, if any of the toppings are out of your budget then you can easily leave them out and it will still be delicious. It’s a very forgiving and versatile recipe.
As a bonus, it’s good for busy moms because it is easy to make and you don’t really need to serve any sides with it! After all the toppings, Hawaiian Haystacks is a whole meal in itself and sides become unnecessary.
I also think it’s a great dinner if you have picky eaters in your family. People can put on the toppings they like and leave the ones they’d rather not touch. My toddler will eat most of it but he likes all of his toppings separated out and not everything piled on top of each other. I on the other hand like to mix it all together.
