10-Minute Pineapple Salsa Recipe

Mexican food was a staple in my home growing up. In a busy family of five kids, we learned how to make our favorite recipes but do it in record time. Making Tex Mex in a hurry is all about using a few ingredients that go a long way. Salsa has that effect. You get a big bang for your buck when it comes to flavors and textures. And this pineapple salsa recipe ticks all the boxes! It’s perfect for a summer party dish or just a refreshing bite at home.

Pineapple Salsa Recipe

Ingredients

  • 2 cups finely chopped fresh pineapple
  • 4 chopped roma tomatoes
  • 3/4 chopped red onion
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon ground coriander
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon minced garlic
  • Tortilla chips

Fresh pineapple is really the ticket to getting the robust flavors in this pineapple salsa recipe. The citric acid of the pineapple, which gives you that tangy and sharp fresh flavor, helps to balance out the earthy and light flavor of coriander and cumin.

While you could use any kind of tomato, Roma tomatoes are my salsa go-to. They help a lot with texture because they have very few seeds but lots of flesh (the meat of the tomato).
