Ingredients
- 2 cups finely chopped fresh pineapple
- 4 chopped roma tomatoes
- 3/4 chopped red onion
- 1/4 cup chopped cilantro
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 1 teaspoon ground coriander
- 3/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon minced garlic
- Tortilla chips
Fresh pineapple is really the ticket to getting the robust flavors in this pineapple salsa recipe. The citric acid of the pineapple, which gives you that tangy and sharp fresh flavor, helps to balance out the earthy and light flavor of coriander and cumin.
While you could use any kind of tomato, Roma tomatoes are my salsa go-to. They help a lot with texture because they have very few seeds but lots of flesh (the meat of the tomato).
Really all the ingredients within this pineapple salsa recipe add an important dimension to the dish. However, if you don’t have one of the ingredients, it’s okay to substitute it!
