I recently did a post on Bacon Loaded Deviled Eggs with Diet Coke® Ginger Lime, and wanted to share another fun recipe paring for Diet Coke®. Because lately we’ve been in one of those Coca-Cola moods. I mean, how could we not? This past weekend the sun was shining so we took a quick pit-stop at the beach on the way home from picking my dad up at the airport. My dad threw rocks into the water with our little boy, Johnny. After each throw, Johnny would yell, “Again!” Even though some pretty giant rocks were thrown, thankfully no back muscles were pulled.
The beach trip reminded me of the time in Cozumel, Mexico when Jake and I sat at a white plastic table leaning back in our white plastic chairs. We each had a chilled bottle of Coca-Cola. The coolness beautifully contrasted the warm sun shining on our skin. We had our sunglasses on and looked out over the crashing water. It was one of those I-could-do-this-for-the-rest-of-my-life moments.

Cheesy Spinach Artichoke Dip Recipe
You know something tastes good when you can’t leave it alone. That’s the case with my cheesy spinach artichoke dip that includes a comforting mix of cheeses. Below are all of the ingredients you’ll need and step-by-step directions for making your own cheesy spinach artichoke dip.
Ingredients
- 2 cups parmesan cheese
- 1/2 cup mozzarella cheese
- 10 oz frozen chopped spinach
- 1 can (about 14 oz) artichoke hearts
- 1 cup (8 oz) cream cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 teaspoons minced garlic
- 1/2 teaspoon salt
You can purchase all of these ingredients at a Kroger brand grocery store. I went to my local QFC. They had a special Diet Coke display going on near the floral department. It was featuring the 12oz new sleek cans and new added flavors. I’m loving the sleek look…classy! QFC was offering 8 packs and on-the-go single cans, so of course I grabbed one of each flavor. It was fun trying each one! You should too to see which one’s your fav.
The new flavors are: Diet Coke® Feisty Cherry, Diet Coke® Fresh Ginger Lime, Diet Coke® Twisted Mango, and Diet Coke® Zesty Blood Orange. The original Diet Coke got a facelift, but it still has the same great taste. Take the quick quiz (click HERE) to find out which flavor is your match.
Directions
First, prep your ingredients. Thaw your spinach, squeeze out the excess liquid, and drain. Drain the artichokes and chop them into pieces. Soften your cream cheese by putting it in the microwave for 1 minute.
In a bowl, mix together the cream cheese, sour cream, mayonnaise, garlic, and salt. Then add in the rest of the ingredients and stir until mixed.
Spread mixture into a baking dish.
Bake at 375°F for 25 minutes then broil for about 5 minutes or until top is golden brown.
Slice up a french baguette to dip in your cheesy spinach artichoke dip. Or you can use crackers, tortilla chips, carrot sticks, or bell pepper slices.
Serve with a chilled Diet Coke. You can pour your Diet Coke over ice, or you can keep things easy and leave it in the can.
