When my husband was young, he almost passed out one Christmas morning due to intense adrenaline on an empty stomach. But who has time to prepare and cook breakfast when there is holiday fun to be had?! That is why this easy French toast casserole for Christmas breakfast is such a perfect idea! You can prepare it the night before, pop it in the oven on Christmas morning, and be eating a delicious meal within 30 minutes. Just what you and your family need to keep up your strength and energy…and to keep you from passing out. 🙂

How-To French Toast Casserole for Christmas Breakfast

Recipe

  • 2 Tb. butter
  • 6 c. white sandwich bread cubes
  • 5 eggs
  • 1 1/2 c. vanilla almond milk
  • 1/4 c. white sugar (divided)
  • 1/4 c. brown sugar (divided)
  •  1/4 tsp. salt
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • syrup

Preheat oven to 400 degrees F.

Melt butter in 9×13 baking pan. Line bottom of pan with bread cubes. In a large bowl, beat together eggs, milk, 2 tablespoons of white sugar, 2 tablespoons of brown sugar, salt, and vanilla extract with a whisk for 30 seconds. Pour egg mixture over bread, making sure to soak the bread evenly. Let stand for 15 minutes.

Combine 2 tablespoons of white sugar, 2 tablespoons of brown sugar, and cinnamon in a small bowl. Sprinkle evenly over the top of the bread. Cover pan with tin foil. Bake in preheated oven for 20-25 minutes. Remove tin foil and continue to bake for 5-10 minutes until top is golden.

Remove from oven. Recover with tin foil until ready to eat. Top with syrup and whipped cream.

Enjoy!
